Don Rosendo Select

Don Rosendo Select express the identity and style or our wines, eternally related to the vineyard they were born at. Terroir: The grapes come from our state located at 1.020 meters obove (3.347 feet) above sea level in Lujan de Cuyo.Through accurate vineyard management, with daily prune and thinning, we achieve low levels of yield (1,5 Kg. - 3,30 pounds per plant) and concentrate the grapes terroir expression. The harvest is done manually, during the first days of April (Fall in Southern Hemisphere), when grapes have reached their full ripeness. At the winery: After destemming, a pre-fermentative maceration at low temperature is carried out. The alcoholic fermentation takes place in French oak casks and then a long maceration with grape skins during 10 days. A 12-15 months aging in French oak inlcudes the completion of the malolactic fermentation. Finally an organoleptic analysis determines when the correct moment for bottling arrives.
